Due to some staffing challenges, the selection for this round is reduced to ease the production workflow. The following strains ARE NOT available in this release;

  • OSLO Gluten Free
  • Aurora
  • S. Arlingtonesis
  • Chardonnay
  • Funk Weapon #1
  • Classic American
  • Classic New England
  • Classic English
Highlights of this release:
  • NEW BETA! We decided to supercharge our Double NEEPAH BETA culture with the addition of another unique kveik culture...MODEN! This novel skare-derived isolate has pushed Double NEEPAH to a new level, so we've given it the v2 version number. Double NEEPAH v2 is faster fermenting, more tolerant of higher gravities and even more fruity and flavorful. Give it a whirl!
  • BETA CulturesREGAL has started to pull ahead of OSLO in popularity and may see a full release soon!
  • Two New Core Cultures:  Berliner Blend and OB Belgian are graduating from our BETA program!  OB Belgian has become our go-to strain for Belgian Table beers and Triple's, and Berliner Blend has become the ideal culture for non-fussy, mixed culture Goses and Berliners.
  • Sour Solera Summer 2021: Latest iteration of our evolving Sour Solera mixed culture incorporating our most recently sourced unique yeast and bacteria cultures. Check out Noah Bissell giving Sour Solera props in the latest Graining In Podcast.

All strains are packaged with 100 billion cells, except Funk Weapons (Brett) which are 200 billion cells

Bootleg Biology is an open source yeast (and wild bugs) project whose goal is to create the world’s most diverse library of microbes for the creation of fermented foods and beverages.

All microbes are sourced and isolated from “bootleg” sources such as: backyards, orchards, kombucha, yogurt, honey, fruit, bottle dregs, and whatever else we can get our hands on.

Enthusiasts contribute their yeast or house cultures to the project, with the shared goal of enriching the Bootleg Biology community’s access to diverse microbes.

Bootleg Biology is the first organization to pioneer the collection and cultivation of official local yeast strains for every U.S. postal code and country across the globe, beginning with the original S. arlingtonesis.
