Orange Peel, 1oz
Two types of dried orange peel are generally used for homebrewing.
Sweet Orange Peel: (Aurantium Dulcis Pericarpium) these have an impact like the flavor of Grand Marnier. Great for that added depth in Belgians, strong ales, and special holiday beer. Use 1/2 ounce in a 5 gallon batch, or to your taste. Add he peels about 15 minutes before the end of the boil. The flavour is sweet orange and is complimented by coriander, honey, and paradise seed.
Bitter Orange Peel: ( Auratium Amarae Pericarpium) Dried bitter orange peel gives a citrusy, herbal aroma commonly used in Belgian Witbier, Grand Crus and other light-colored styles. Use a larger amount for a noticeable orange flavor/aroma, or a smaller amount for a more delicate suggestion. Works well with classic European hops as well, or in English summer ale. Use 1/2 ounce in a 5 gallon batch, or to your taste. Add he peels about 15 minutes before the end of the boil. White (Wit) beers also require the flavour of coriander (about 1/2 ounce) which can be added at the same time as the peels.
