Torrefied Flaked Wheat
Flaked wheat is whole unmalted wheat flakes cooked and rolled. It is a common ingredient in wheat beers, including American Wheat, Bavarian Weisse, and is essential to Belgian Lambic and Wit. It adds starch haze and high levels of protein. Flaked wheat adds more wheat flavour "sharpness" than malted/torrefied wheat.
Note: Torrefied flaked wheat and toasted flaked wheat can be interchanged in recipes 1:1 and both will result in the same beer qualities and taste. Torrefied is a process using high heat and toasted flaking uses steam and high pressure.
